Cup Cashew
1 Cup Mixed nuts
1⁄2 Cup Cocoa
2 Tbsp Rice syrup
1 tsp vanilla extract
2 Tbsp Pea Protein Powder
1/3 Cup coconut oil
1⁄4 Cup cranberries (optional)
1⁄4 Cup chopped dark chocolate or nibs
200g Dark chocolate, melted
Method
1. Blend Cashews and mixed nuts in a blender. Once you have achieved an even consistency, pour the nut mixture into a mixing bowl.
2. Add Cocoa, vanilla extract, rice syrup, Pea Protein, and coconut oil to bowl.
3. Blend all ingredients together until smooth. Line a plate or tray with non-stick baking liner or baking paper. Using a teaspoon scoop mixture and mould into ball shape or slice. Dip the protein ball into melted chocolate. I find having the melted chocolate in a shallow dish makes it easier to dip and extract the ball before placing on baking sheet. Once you have used up all the mixture. Place the chocolate coated balls in the fridge until chocolate is hard. Ready to eat!!!
Alternatively line a baking tray and press nut mixture into tray. Press down with a fork or the palm of your hand until flat and even. Then melt dark chocolate and drizzle over the top of the flat nut mixture. Put on level shelf in fridge for 30 minutes or until chocolate is set. Slice into desired size.
